This is my husband. As you can see, he’s just a regular guy. But he has a knack for making delicious meals out of what looks to me like, well, nothing. I’m a recipe follower. If all the ingredients aren’t available, I default to trail mix.
It is my hope to share with you, one simple step at a time, how Mark (said husband) pulls off a delicious meal night after night. Let’s get started!
Cap Loin Steak with summer salad and Bruschetta
Salads are often a main staple at our house. Mark starts with Bistro Organic Spring Mix from Costco (currently $3.89 in our area.) Here he added chopped cucumbers, sliced tomatoes, blackberries and flat leaf parsley.
The Bruschetta was my contribution-somewhat. I started with a recipe from Costco Connection that I had made the night before. (Link below.) The bread itself was recycled: brushed with olive oil and refreshed with butter and Trader Joe’s garlic salt, reheated and topped with whipped cream cheese and the fruit topping, chopped mint and basil.
Mark endeavors to use all the food we buy. Often, that means repurposing leftovers to make them more appealing.
